Step into the world of sparkling wine

Sparkling wines have a magic that captivates us every time. They symbolise celebration, elegance and moments meant to be shared. Yet behind their lively bubbles lies an entire world of tradition, geography, aromas and craftsmanship. In December, this world shines even brighter as Portorož opens its doors to its most refined festive event: 12th Sparkling wine Festival. 

Sparkling wine or Champagne? A key distinction

Champagne is a sparkling wine produced exclusively in the Champagne region of France.
“Penina” is the Slovenian term for sparkling wine produced in Slovenia or elsewhere, often using the same traditional methods.

Before exploring the 200+ samples at the festival, it’s helpful to know the international terminology:

  • Spain – Cava
  • Italy – Spumante, Franciacorta, TrentoDOC
  • Germany & Austria – Sekt
  • Portugal – Espumante

Production methods

Sparkling wines are made using two main approaches:

  • Traditional Method (méthode classique): second fermentation in the bottle, finer bubbles, greater complexity.
  • Charmat Method: fermentation in tanks, resulting in fresher and fruitier wines.
Choosing the right glass

Aroma and elegance need space:

  • Flute – ideal for fresh, youthful wines
  • Tulip glass – the most versatile, allowing aromas to open
  • White wine–style Champagne glass – best for mature sparkling wines and aged Champagne

With the right glass, every sparkling wine reveals its true character.

12th Festival of Sparkling Wines

Portorož will once again sparkle as the 12thSparkling Wine Festival takes over the magnificent Crystal Hall of Hotel Kempinski Palace Portorož.
This festive tradition attracts wine lovers, experts and all who enjoy an elegant December evening.

Over 200 samples – the largest sparkling wine tasting in Slovenia

This year’s edition will showcase more than 200 sparkling wines, from classic whites and rosés to prestigious Champagnes and special vintages.

A unique chance to discover styles ranging from playful to refined.

Announcement of the “Best sparkling wine 2025”

A highlight of the evening is the proclamation of the Best sparkling wine 2025, awarded by a panel of experts. A prestigious title often hinting at trends for the year ahead.
