Vision and wish
I would like to make COB one of the best restaurants in this part of Europe.
COB prepares an unexpected experience for your feelings through different elements of catering (service, cooking, drink selection, atmosphere, inventory selection...).
I was grown in contact with catering and hotel industry in a family that has both of them in its blood, so it was natural for me to stay in this business. My parents encouraged me and offered me excellent conditions for development. I can say they really considered me and my wishes even though there was always a lot of work to do at home. It started as a kind of hobby. I have always loved cooking, I started cooking local, simple dishes, then I tried working in the real cuisine, where usually nothing is as it seems, and I did not get scared. In gastronomy you have to always find new possibilities, challenges that improve and upgrade yourself. It is the only way to overtake bad days, and in our business there are a lot of bad days. The infinite possibilities cooking offers convinced me to dedicate time and efforts to my job.
COB (cooking outside the box)
I decided for such type of restaurant because I have always wanted to present guests a completely different, new way of enjoying food and drinks. The biggest satisfaction in my job is the interactive restaurant, where I can present guests our surroundings with an interactive experience. I will also try to teach in that way other young cooking professionals of our small, but very rich in terms of gastronomy, country. I am also concerned about cultural heritage, I create unforgettable culinary experiences with the best local products.
Interactive restaurant idea
In short, COB is a modern "fine dining" restaurant where quality is at the first place. It is not a huge restaurant (max. 36 guests). As the term COB says (Cooking outside the box), the idea of the restaurant is cooking in a completely different way than in other Slovenian restaurants. It means the guest in COB will discover Slovenian gastronomy in a funny, unexpected and interactive way. This is fairly unknown in Slovenia. COB prepares an unexpected experience for your feelings through different elements of catering (service, cooking, drink selection, atmosphere, inventory selection...).
The idea of COB comes from the passion/hobby for excellent cuisine and the wish to improve Slovenian cooking. I also wish to make COB one of the best restaurant in this part of Europe. The project is supported by famous international chefs and critics, headed by the ex director of the Michelin guide for Italy, Mr. Fausto Arrighi and the famous chef from Friuli Venezia Giulia Emanuel.
Two internationally rewarded chefs give COB additional culinary importance. Once they were part of Slovenian youth culinary team and regularly cooperated with famous Slovenian and foreign cooking chefs (Jagodic, Volčič, Kavčič, Scarello, Guarino...). Lately they worked in one of the best world restaurants, the Fat Duck in London, headed by Heston Blumenthal.
