In the Strunjan fields grows the indigenous, delicious, medicinal, yet still little-known Istrian artichoke. This variety has an even longer tradition in Slovenian Istria than the persimmon, as it has been known in Strunjan since before the times of the Venetian Republic. It thrives in sunny locations—which are plentiful here. It loves warmth, and May is its peak season. With its purple-green color, it is slightly smaller than the common artichoke, but significantly more flavorful, which is why it is so highly valued among gourmets.
Although the artichoke began to be used as a medicinal plant only in the 20th century, the list of dishes that can be prepared with this Mediterranean plant is still long today: salads, pickled artichokes, artichokes as an addition to meat sauces, pasta, pizzas... the artichoke leaves plenty of room for culinary imagination.
