When nature turns green and the forest paths are filled with the scent of freshness, it's time for one of spring’s greatest culinary delights – wild asparagus. Their slightly bitter taste, rich in minerals and vitamins, forms the foundation of many exquisite dishes that grace the tables of the finest taverns and restaurants in Slovenian Istria during this time of year.

This year, the culinary celebration extends across Slovenian Istria, allowing you to enjoy unique wild asparagus creations in 20 selected taverns and restaurants. From traditional dishes like fritaja with asparagus to modern culinary interpretations, each plate tells the story of Istrian gastronomy.
