Preparation
Wash the sliced garlic in warm
water then drain, and fry with the pancetta in the lukewarm
fat. When it starts to smell good,
add the sifted corn meal, fry a little more, cover with hot water and cook for
half an hour. Finally, add the beaten egg, a pinch of salt, freshly grated
cheese and a few drops of olive oil. Garnish with fried garlic and pancetta.
